  • ⅓ cup dutch processed cocoa powder
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a stand mixer or large bowl, beat together room temperature unsalted butter, white sugar, and light brown sugar until light and fluffy.
  3. Add one large egg and egg yolk, along with vanilla extract, and mix until combined.
  4. Gradually incorporate dry ingredients: flour, cocoa powder, baking powder, baking soda, and salt. Mix on low speed until just combined.
  5. Fold in white chocolate chips and chill the dough in the refrigerator for 45–60 minutes.
  6. Scoop about 2 tablespoons of dough onto the prepared baking sheets, leaving space between each cookie.
