Ingredients
- 2 1/4 cups mashed overripe bananas
- 2 cups all-purpose flour
- 1/4 tsp salt
- 1 tsp baking soda
- 1/2 tsp nutmeg
- 1/2 cup butter
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 2 eggs, beaten
- 1 tsp vanilla extract
- 1 tsp cinnamon
Instructions
- Mash bananas until you have 2 1/4 cups.
- In a large bowl, mix flour, salt, baking soda, and nutmeg.
- In another bowl, cream together butter with both sugars. Add cinnamon, eggs, vanilla, and mashed bananas; stir until well combined.
- Gradually add the banana mixture to the flour blend; stir gently until just combined.
- Pour batter into a greased pan; place trivet and water in the Instant Pot.
- Cover the pan with foil (using handles for easy removal).
- Seal the lid on the Instant Pot and set to cook for 50 minutes on manual mode.
- After cooking, perform a quick release; carefully remove the pan using the foil handles.
- Allow cooling on a rack before slicing.
