- 4 medium Russet potatoes (about 2 lbs)
- 3 tablespoons olive oil
- 4 cloves fresh garlic, minced
- ¾ cup grated parmesan cheese
- 1 teaspoon dried oregano
- Salt & pepper to taste
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and scrub the russet potatoes thoroughly, then cut them into wedges (about eight per potato).
- In a large bowl, toss the potato wedges with olive oil, minced garlic, salt, pepper, oregano, and half of the parmesan cheese until evenly coated.
- Spread the seasoned wedges in a single layer on the prepared baking sheet and bake for 25-30 minutes until golden brown and crispy.
- Remove from the oven, sprinkle with the remaining parmesan cheese, and return to bake for an additional 5 minutes until bubbly.
- Serve hot with your favorite dipping sauces like ketchup or ranch dressing.
