  • 4 medium Russet potatoes (about 2 lbs)
  • 3 tablespoons olive oil
  • 4 cloves fresh garlic, minced
  • ¾ cup grated parmesan cheese
  • 1 teaspoon dried oregano
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and scrub the russet potatoes thoroughly, then cut them into wedges (about eight per potato).
  3. In a large bowl, toss the potato wedges with olive oil, minced garlic, salt, pepper, oregano, and half of the parmesan cheese until evenly coated.
  4. Spread the seasoned wedges in a single layer on the prepared baking sheet and bake for 25-30 minutes until golden brown and crispy.
  5. Remove from the oven, sprinkle with the remaining parmesan cheese, and return to bake for an additional 5 minutes until bubbly.
