Ingredients

Scale
  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1/2 cup balsamic vinegar
  • 2 tsp extra virgin olive oil
  • 3 cups fresh spinach
  • 4 oz creamy goat cheese
  • 1 large red bell pepper, sliced
  • 4 large flour tortillas

Instructions

  1. 1. Marinate the chicken: Combine balsamic vinegar, olive oil, salt, and pepper in a bowl. Add chicken breasts and marinate for at least 30 minutes.
  2. 2. Cook the chicken: Preheat grill or skillet over medium-high heat. Remove chicken from marinade and cook until golden brown (6-7 minutes per side). Ensure internal temperature reaches 165°F.
  3. 3. Slice the chicken: Let cooked chicken rest for 5 minutes before slicing into strips.
  4. 4. Prepare the wraps: Lay tortillas flat. Spread goat cheese on each wrap, add spinach and sliced bell pepper.
  5. 5. Assemble: Place sliced chicken on top of veggies and drizzle with remaining balsamic marinade.
  6. 6. Roll up: Tightly roll each tortilla around the filling and cut in half if desired.
