- 4 oz creamy goat cheese
- 1 large red bell pepper, sliced
- 4 large flour tortillas
Instructions
- 1. Marinate the chicken: Combine balsamic vinegar, olive oil, salt, and pepper in a bowl. Add chicken breasts and marinate for at least 30 minutes.
- 2. Cook the chicken: Preheat grill or skillet over medium-high heat. Remove chicken from marinade and cook until golden brown (6-7 minutes per side). Ensure internal temperature reaches 165°F.
- 3. Slice the chicken: Let cooked chicken rest for 5 minutes before slicing into strips.
- 4. Prepare the wraps: Lay tortillas flat. Spread goat cheese on each wrap, add spinach and sliced bell pepper.
- 5. Assemble: Place sliced chicken on top of veggies and drizzle with remaining balsamic marinade.
- 6. Roll up: Tightly roll each tortilla around the filling and cut in half if desired.
