  • Total Time: 48 minutes
  • Yield: Makes approximately 12 mini croissants 1x

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup cold unsalted butter
  • 1 tablespoon granulated sugar
  • 2 teaspoons active dry yeast
  • 1 teaspoon salt
  • 1/2 cup cold whole milk
  • 1/4 cup cold water
  • 1/2 cup bittersweet chocolate chips or chopped chocolate
  • 1/2 cup sliced almonds
  • 1 egg (for egg wash)

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and yeast. Cut in the cold butter until crumbly.
  2. Gradually incorporate milk and water until the mixture forms a dough. Knead gently until smooth.
  3. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  4. Roll out the chilled dough into a rectangle about ¼ inch thick; fold it into thirds like a letter. Repeat this process two more times.
  5. Roll out again into a larger rectangle; cut into triangles. Add chocolate chips and sliced almonds to the wide end of each triangle and roll up tightly.
  6. Preheat oven to 400°F (200°C). Place croissants on a parchment-lined baking sheet and brush with egg wash.
  7. Bake for 15-18 minutes or until golden brown.
