- 2 lbs boneless skinless chicken thighs
- 4 cloves fresh garlic, minced
- 1 cup low-sodium chicken broth
- 1/3 cup brown sugar
- 1/3 cup low-sodium soy sauce
- 1 tbsp fresh ginger, grated
- 2 tbsp apple cider vinegar
Instructions
- Trim excess fat from chicken thighs and pat them dry.
- In a bowl, mix chicken broth, soy sauce, brown sugar, ginger, garlic, and apple cider vinegar until well combined.
- Place the chicken in the crockpot and pour the marinade over it; stir gently to coat.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred the chicken with two forks when cooked through; return to the pot and stir well.
- Serve with extra sauce over rice or steamed vegetables.
