  • 2 lbs boneless skinless chicken thighs
  • 4 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/3 cup brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1 tbsp fresh ginger, grated
  • 2 tbsp apple cider vinegar

Instructions

  1. Trim excess fat from chicken thighs and pat them dry.
  2. In a bowl, mix chicken broth, soy sauce, brown sugar, ginger, garlic, and apple cider vinegar until well combined.
  3. Place the chicken in the crockpot and pour the marinade over it; stir gently to coat.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Shred the chicken with two forks when cooked through; return to the pot and stir well.
  6. Serve with extra sauce over rice or steamed vegetables.
