- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- Zest and juice of 3 lemons
- 1/4 cup olive oil
- 1 cup chicken broth
- 1 cup long grain rice
- 1 tbsp dried oregano
- Salt and pepper to taste
Instructions
- 1. Marinate the Chicken: In a bowl, mix olive oil, minced garlic, lemon juice, zest, oregano, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
- 2. Preheat the Oven: Set your oven to 400°F (200°C) and lightly coat a baking dish with nonstick spray.
- 3. Sear the Chicken: Heat a skillet over medium-high heat. Sear each chicken breast for about 3 minutes per side until golden brown.
- 4. Cook the Rice: In another pot, bring chicken broth to a boil. Add rinsed rice, reduce heat to simmer, cover, and cook for about 15 minutes until fluffy.
- 5. Combine Everything: Place seared chicken on cooked rice in the baking dish. Pour any remaining marinade over the top.
- 6. Bake: Cover with foil and bake for about 20 minutes until chicken reaches an internal temperature of 165°F (74°C).
