- 1 pound sirloin steak
- 3 tablespoons extra virgin olive oil
- 4 cloves fresh garlic, minced
- 2 tablespoons lemon juice
- 1 teaspoon ground cumin
- 1 cup couscous or quinoa
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- Fresh parsley or mint leaves for garnish
Instructions
- Marinate the steak: In a bowl, mix olive oil, minced garlic, lemon juice, ground cumin, salt, and pepper. Coat the sirloin steak well and marinate in the fridge for at least one hour.
- Cook the couscous or quinoa: Prepare according to package instructions while the steak marinates.
- Grill the steak: Heat a grill or skillet over medium-high heat. Grill the marinated steak for about 5 minutes on each side for medium-rare doneness.
- Chop veggies: While the steak rests, dice cherry tomatoes and cucumbers. Toss with olive oil and a pinch of salt.
- Assemble bowls: Spoon couscous or quinoa into bowls. Slice the rested steak against the grain and place it on top of the grains. Add chopped veggies.
- Garnish & serve: Finish with fresh herbs and enjoy!
