Instructions
- Cut chicken into bite-sized pieces.
- In a bowl, whisk together peanut butter, coconut milk, lime juice, soy sauce, brown sugar, and chili paste until smooth.
- Heat oil in a large skillet over medium-high heat. Add chicken pieces and cook until golden brown and cooked through (about 5-7 minutes).
- Pour the peanut sauce over the chicken, stir to coat evenly, and let simmer for another 5 minutes.
- Adjust seasoning as desired and serve garnished with chopped peanuts or cilantro.
