- 1 lb beef sirloin, cut into bite-sized cubes
- 1 lb baby potatoes, halved
- 4 cloves garlic, minced
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes. Toss them with olive oil, salt, pepper, and half of the minced garlic. Spread on a baking sheet and roast for about 20 minutes until golden brown.
- In another bowl, season beef cubes with olive oil, salt, pepper, and remaining garlic. Heat a skillet over medium-high heat, melt butter, and sauté beef for about 3-4 minutes per side until browned.
- Combine roasted potatoes with sautéed beef in the skillet. Sprinkle with fresh parsley before serving.
