  • 14.5 oz diced tomatoes
  • 1 cup cooked brown rice
  • 1/3 cup parsley
  • 1 cup feta cheese
  • 2.5 tsp salt
  • 2.5 tsp garlic powder
  • 2.5 tsp cumin
  • 1.5 tsp coriander
  • 1.5 tsp oregano
  • 1/4 tsp cinnamon
  • 1/8 tsp cayenne pepper
  • 2 tbsp fresh mint

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine ground beef with salt, garlic powder, cumin, coriander, oregano, cinnamon, and cayenne pepper. Mix thoroughly.
  3. Add chickpeas, diced tomatoes, cooked brown rice, parsley, feta cheese, and mint; stir gently until well combined.
  4. Fill each bell pepper with the mixture without overflowing.
  5. Place peppers upright in a baking dish. Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 15 minutes until tops are golden brown.
