Ingredients
- 8 bell peppers
- 1 lb ground beef
- 14 oz chickpeas
- 14.5 oz diced tomatoes
- 1 cup cooked brown rice
- 1/3 cup parsley
- 1 cup feta cheese
- 2.5 tsp salt
- 2.5 tsp garlic powder
- 2.5 tsp cumin
- 1.5 tsp coriander
- 1.5 tsp oregano
- 1/4 tsp cinnamon
- 1/8 tsp cayenne pepper
- 2 tbsp fresh mint
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine ground beef with salt, garlic powder, cumin, coriander, oregano, cinnamon, and cayenne pepper. Mix thoroughly.
- Add chickpeas, diced tomatoes, cooked brown rice, parsley, feta cheese, and mint; stir gently until well combined.
- Fill each bell pepper with the mixture without overflowing.
- Place peppers upright in a baking dish. Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 15 minutes until tops are golden brown.
- Let cool slightly before serving.
