- 1 lb ground turkey
- 1/4 cup fresh parsley, finely chopped
- 2 garlic cloves, minced
- 1/4 cup onion, finely chopped
- 1/2 cup panko breadcrumbs
- 1 large egg
- Salt and pepper to taste
- 1 cup Greek yogurt
- 1/2 cucumber, grated and excess moisture squeezed out
- 2 tbsp lemon juice
- 1 tbsp fresh dill, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix ground turkey, parsley, garlic, onion, panko breadcrumbs, egg, salt, and pepper until just combined.
- Shape the mixture into golf ball-sized meatballs (about 2 tablespoons each) and place on a parchment-lined baking sheet.
- Bake for 20-25 minutes until golden brown and the internal temperature reaches 165°F (74°C).
- While meatballs bake, combine Greek yogurt, grated cucumber, lemon juice, dill, salt, and pepper in a bowl for tzatziki.
- Serve meatballs drizzled with tzatziki.
