  • 1/4 cup fresh parsley, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup onion, finely chopped
  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and excess moisture squeezed out
  • 2 tbsp lemon juice
  • 1 tbsp fresh dill, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix ground turkey, parsley, garlic, onion, panko breadcrumbs, egg, salt, and pepper until just combined.
  3. Shape the mixture into golf ball-sized meatballs (about 2 tablespoons each) and place on a parchment-lined baking sheet.
  4. Bake for 20-25 minutes until golden brown and the internal temperature reaches 165°F (74°C).
  5. While meatballs bake, combine Greek yogurt, grated cucumber, lemon juice, dill, salt, and pepper in a bowl for tzatziki.
  6. Serve meatballs drizzled with tzatziki.
