- 1 cup rolled oats
- 1 cup almond flour
- 1/4 cup cocoa powder
- 1/4 cup coconut oil (melted)
- 1/3 cup maple syrup
- 1 tsp pure peppermint extract
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, mix rolled oats, almond flour, cocoa powder, and optional dry ingredients.
- Melt coconut oil over low heat and let cool slightly.
- In another bowl, whisk together melted coconut oil, maple syrup, and peppermint extract until smooth.
- Combine wet and dry ingredients; stir until a thick dough forms.
- Scoop tablespoon-sized balls onto prepared sheets, flatten slightly, and bake for 10-12 minutes until set but soft in the middle.
- Cool on the pan for five minutes before transferring to wire racks.
