Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream together butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  4. Mix in fresh key lime juice and zest until combined.
  5. Gradually add dry ingredients to the wet mixture until just combined; do not overmix.
  6. Pour batter evenly into prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  7. Allow cakes to cool completely before frosting with a mixture of cream cheese, butter, and powdered sugar.
