Instructions
- Melt dark chocolate chips in a heatproof bowl over simmering water until smooth.
- Blend half of the raspberries into a puree and strain for a smoother consistency.
- In a mixing bowl, whip cold heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Gently fold the melted chocolate into the whipped cream and add agar-agar according to package instructions.
- Layer raspberry puree, mousse mixture, and whole raspberries in serving cups.
- Chill in the refrigerator for at least 2 hours before serving.
