  • 1 ½ cups all-purpose flour

  • ½ cup coconut cream (for frosting)
  • ¼ cup powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round baking pans.
  2. In a food processor, pulse half the pistachios into fine crumbs, leaving some chunkier pieces for texture.
  3. In a bowl, whisk together flour, sugar, baking powder, and ground pistachios.
  4. In another bowl, beat eggs with vegetable oil and vanilla until creamy. Gradually mix into dry ingredients until just combined.
  5. Divide batter between pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  6. For frosting, whip coconut cream with powdered sugar until smooth. Once the cakes cool, frost between layers and on top; sprinkle with chopped pistachios.
