Instructions
- Preheat your oven to 350°F (175°C) and grease two round baking pans.
- In a food processor, pulse half the pistachios into fine crumbs, leaving some chunkier pieces for texture.
- In a bowl, whisk together flour, sugar, baking powder, and ground pistachios.
- In another bowl, beat eggs with vegetable oil and vanilla until creamy. Gradually mix into dry ingredients until just combined.
- Divide batter between pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
- For frosting, whip coconut cream with powdered sugar until smooth. Once the cakes cool, frost between layers and on top; sprinkle with chopped pistachios.
