Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In another bowl, mix the ricotta, sugar, eggs, and vanilla until smooth.
- Gradually combine the dry mixture with the wet mixture; stir until just combined.
- Gently fold in the chocolate chips.
- Fill muffin tins two-thirds full and bake for 20-25 minutes until golden brown and a toothpick comes out clean.
