- 4 skinless salmon fillets (6 oz each)
- 4 cups fresh spinach
- 8 oz cream cheese (full-fat)
- 2 cloves garlic (minced)
- 1/2 cup grated Parmesan cheese
- 2 tbsp lemon juice (freshly squeezed)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and lightly coat a baking dish with nonstick cooking spray.
- In a pan over medium heat, sauté minced garlic in olive oil until fragrant, then add fresh spinach and cook until wilted (about 3 minutes).
- In a mixing bowl, combine the sautéed spinach with cream cheese, Parmesan cheese, and lemon juice; mix well.
- Cut pockets into each salmon fillet and generously stuff them with the spinach mixture. Secure with toothpicks if necessary.
- Season the stuffed fillets with salt and pepper before placing them in the prepared baking dish. Bake for 20-25 minutes or until cooked through.
- Allow to rest for a few minutes before serving. Enjoy with your choice of sides.
