- 1 cup unsalted butter, room temperature
- 2 cups granulated sugar
- 4 large eggs, room temperature
- 3 cups all-purpose flour, sifted
- 2 tsp baking powder
- 1 cup sour cream
- 2 tsp vanilla extract
- 1 cup fresh strawberries, chopped
- 8 oz cream cheese, softened
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
- In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- In another bowl, whisk together flour and baking powder; gradually add to wet ingredients alternating with sour cream.
- Gently fold in chopped strawberries.
- Beat cream cheese with sugar until smooth; set aside.
- Pour half the batter into the loaf pan, dollop cream cheese mixture on top, then add remaining batter.
- Bake for about 60 minutes or until a toothpick comes out clean. Let cool before slicing.
