  • 4 large eggs, room temperature
  • 3 cups all-purpose flour, sifted
  • 2 tsp baking powder
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 1 cup fresh strawberries, chopped
  • 8 oz cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour and baking powder; gradually add to wet ingredients alternating with sour cream.
  5. Gently fold in chopped strawberries.
  6. Beat cream cheese with sugar until smooth; set aside.
  7. Pour half the batter into the loaf pan, dollop cream cheese mixture on top, then add remaining batter.
  8. Bake for about 60 minutes or until a toothpick comes out clean. Let cool before slicing.
