- 4 salmon fillets (about 6 oz each)
- 1 cup fresh pineapple chunks
- 3 tbsp honey
- 3 tbsp low-sodium soy sauce
- 1 tsp red pepper flakes (adjust to taste)
- 2 tbsp freshly squeezed lime juice
- 3 garlic cloves, minced
- 2 tbsp extra virgin olive oil
Instructions
- In a medium bowl, whisk together honey, soy sauce, lime juice, minced garlic, olive oil, and red pepper flakes.
- Place salmon fillets in a shallow dish or resealable bag and pour marinade over them. Marinate for at least 30 minutes.
- Preheat your grill to medium-high heat (375°F) or oven to 400°F (200°C).
- Scatter pineapple chunks around the marinated salmon on the grill or a lined baking sheet.
- Grill or bake for 12-15 minutes until salmon flakes easily with a fork.
- Drizzle any leftover marinade over the salmon before serving.
