- 2 medium sweet potatoes (roasted until tender)
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 cup brown sugar
- ½ cup maple syrup
- ⅓ cup vegetable oil
- 1 tsp vanilla extract
- 1 cup powdered sugar (for glaze)
- 2 tbsp maple syrup (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish.
- Roast the sweet potatoes until fork-tender, then mash until smooth.
- In a large bowl, combine the mashed sweet potatoes, brown sugar, vegetable oil, maple syrup, and vanilla extract. Mix well.
- In another bowl, whisk together the flour and baking powder. Gradually add this mixture to the wet ingredients while stirring gently.
- Pour the batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick comes out clean.
- For the glaze, mix powdered sugar and maple syrup until smooth. Drizzle over cooled blondies before cutting.
