- 4 cod fillets (about 6 oz each)
- 1 cup full-fat coconut milk
- 1/4 cup fresh lemon juice
- 2 garlic cloves, minced
- Zest of 1 lemon
- 1 tbsp agar-agar powder
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C).
- Grease a baking dish with nonstick spray or olive oil.
- Season cod fillets with salt and pepper; place them in the prepared dish.
- In a saucepan over medium heat, combine coconut milk, minced garlic, lemon juice, lemon zest, and agar-agar powder. Stir until slightly thickened (about 5 minutes).
- Pour the sauce evenly over the cod fillets.
- Bake for 20-25 minutes until fish flakes easily with a fork.
- Garnish with fresh parsley and serve with rice or vegetables.
