- 4 boneless, skinless chicken breasts
- 2 ripe peaches, chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup low-sodium soy sauce
- 1/4 cup honey
- Juice of 1 lime
Instructions
- Prepare your ingredients: Chop peaches and preheat your grill or oven to medium heat (375°F/190°C).
- Marinate the chicken: In a bowl, combine soy sauce, honey, garlic, ginger, and lime juice. Add chicken breasts and let marinate for at least 30 minutes.
- Grill or bake: Cook marinated chicken on the grill for about 6-7 minutes per side until cooked through (internal temperature should reach 165°F/74°C). If baking, place on a lined baking sheet and cook for about 20-25 minutes.
- Add peaches: In the last few minutes of cooking, add peach chunks around the chicken to caramelize slightly.
- Serve: Plate the chicken with peaches on top and garnish with fresh herbs if desired.
