- 3 medium zucchinis (1.5 lbs), sliced into ¼-inch rounds
- 2 cups marinara sauce
- 2 cups shredded whole milk mozzarella cheese
- 1 cup freshly grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and lightly coat a baking dish with nonstick spray.
- In a skillet over medium heat, sauté zucchini slices in olive oil; season with salt and pepper until tender (about 5 minutes).
- Layer half of the marinara sauce in the baking dish, followed by half of the sautéed zucchini, then half each of the mozzarella and Parmesan cheeses.
- Repeat layers with remaining ingredients, finishing with a sprinkle of cheese on top.
- Bake for 30-35 minutes until bubbly and golden brown. Let cool for 5 minutes before serving.
