Zucchini Parmesan is a comforting and cheesy dish that transforms fresh zucchini into a deliciously satisfying bake. Layered with rich marinara sauce, gooey mozzarella, and freshly grated Parmesan, this dish is perfect for busy weeknights or festive gatherings.   • 3 medium zucchinis (1.5 lbs), sliced into ¼-inch rounds
  • 2 cups marinara sauce
  • 2 cups shredded whole milk mozzarella cheese
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly coat a baking dish with nonstick spray.
  2. In a skillet over medium heat, sauté zucchini slices in olive oil; season with salt and pepper until tender (about 5 minutes).
  3. Layer half of the marinara sauce in the baking dish, followed by half of the sautéed zucchini, then half each of the mozzarella and Parmesan cheeses.
  4. Repeat layers with remaining ingredients, finishing with a sprinkle of cheese on top.
  5. Bake for 30-35 minutes until bubbly and golden brown. Let cool for 5 minutes before serving.
