- 4 large lemons
- 2 cups granulated sugar

Instructions
- Wash and dry the lemons, then zest and juice them, discarding seeds.
- In a large pot, combine lemon juice, zest, sugar, and water; stir until sugar dissolves.
- Bring to a boil over medium heat, then reduce to simmer for 30-40 minutes until thickened.
- Check consistency using the cold plate test; if it gels, remove from heat.
- Allow to cool slightly before pouring into sterilized jars; seal tightly.
