- 1 tablespoon olive oil
- 1 pound ground turkey sausage
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons unsalted butter
- 2 cups finely diced yellow onion (1 large onion)
- 2 cups finely diced carrots (4–5 carrots)
- 1 tablespoon minced garlic
- 2 tablespoons flour
- 7–1/2 cups chicken broth
- 2 cups mini bowtie pasta
- 1–1/2 cups heavy cream
- 2–1/2 packed cups finely chopped kale
- 1/2 cup sun-dried tomatoes (finely chopped)
- 1/2 packed cup grated Parmesan cheese
- Hearty buttered bread (optional)
- Red pepper flakes (optional)
Instructions
- In a large pot, heat olive oil over high heat. Add ground turkey sausage, salt, and pepper; cook until browned. Remove the sausage using a slotted spoon.
- Reduce heat to medium; add butter, onions, carrots, and garlic to the pot. Sauté until tender (7–9 minutes). Sprinkle flour over vegetables and stir for another minute.
- Gradually whisk in 1 cup of chicken broth to form a slurry. Slowly incorporate remaining broth while scraping the pot's bottom.
- Bring the mixture to a boil; add mini bowtie pasta and cook per package instructions but reduce time by one minute.
- Lower heat; stir in heavy cream, chopped kale, sun-dried tomatoes, and Parmesan cheese until melted. Return cooked sausage to the pot and adjust seasoning if needed.
