  • 1 tablespoon minced garlic
  • 2 tablespoons flour
  • 71/2 cups chicken broth
  • 2 cups mini bowtie pasta
  • 11/2 cups heavy cream
  • 21/2 packed cups finely chopped kale
  • 1/2 cup sun-dried tomatoes (finely chopped)
  • 1/2 packed cup grated Parmesan cheese
  • Hearty buttered bread (optional)
  • Red pepper flakes (optional)

Instructions

  1. In a large pot, heat olive oil over high heat. Add ground turkey sausage, salt, and pepper; cook until browned. Remove the sausage using a slotted spoon.
  2. Reduce heat to medium; add butter, onions, carrots, and garlic to the pot. Sauté until tender (7–9 minutes). Sprinkle flour over vegetables and stir for another minute.
  3. Gradually whisk in 1 cup of chicken broth to form a slurry. Slowly incorporate remaining broth while scraping the pot's bottom.
  4. Bring the mixture to a boil; add mini bowtie pasta and cook per package instructions but reduce time by one minute.
  5. Lower heat; stir in heavy cream, chopped kale, sun-dried tomatoes, and Parmesan cheese until melted. Return cooked sausage to the pot and adjust seasoning if needed.
