- 1 pound Italian sausage (beef, turkey, or chicken)
- 4 tablespoons olive oil
- 1 large onion (chopped)
- 2 large carrots (chopped)
- 3 stalks celery (chopped)
- 1 large red bell pepper (chopped)
- 1 large green bell pepper (chopped)
- 2 medium zucchini (sliced)
- 6 cloves garlic (minced)
- 1/2 cup apple cider vinegar
- 6 cups chicken broth
- 2 cans tomato sauce
- 1 can diced fire-roasted tomatoes
- Dried Italian seasoning
- Crushed red pepper flakes
- Small pasta of your choice
Instructions
- In a Dutch oven, brown the sausage over medium heat until fully cooked. Drain excess fat.
- Sauté chopped onion in olive oil until softened. Add carrots and celery; cook until tender.
- Stir in bell peppers and zucchini; cook until all vegetables are tender.
- Add minced garlic and apple cider vinegar; bring to a boil.
- Pour in chicken broth, tomato sauce, fire-roasted tomatoes, Italian seasoning, and crushed red pepper flakes; stir well.
- Return sausage to pot; simmer for about 10 minutes.
- Add small pasta; cook according to package instructions until al dente.
- Stir in fresh parsley before serving warm.
