  • 1 large green bell pepper (chopped)
  • 2 medium zucchini (sliced)
  • 6 cloves garlic (minced)
  • 1/2 cup apple cider vinegar
  • 6 cups chicken broth
  • 2 cans tomato sauce
  • 1 can diced fire-roasted tomatoes
  • Dried Italian seasoning
  • Crushed red pepper flakes
  • Small pasta of your choice

Instructions

  1. In a Dutch oven, brown the sausage over medium heat until fully cooked. Drain excess fat.
  2. Sauté chopped onion in olive oil until softened. Add carrots and celery; cook until tender.
  3. Stir in bell peppers and zucchini; cook until all vegetables are tender.
  4. Add minced garlic and apple cider vinegar; bring to a boil.
  5. Pour in chicken broth, tomato sauce, fire-roasted tomatoes, Italian seasoning, and crushed red pepper flakes; stir well.
  6. Return sausage to pot; simmer for about 10 minutes.
  7. Add small pasta; cook according to package instructions until al dente.
  8. Stir in fresh parsley before serving warm.
