- 1.5 lbs top sirloin steak (cut into 1.5-inch cubes)
- 1 red bell pepper (cut into chunks)
- 1 green bell pepper (cut into chunks)
- 1 red onion (cut into wedges)
- 1 cup cherry tomatoes
- 1 zucchini (sliced into thick half-moons)
- ¼ cup olive oil
- 2 tablespoons soy sauce
- 2 tablespoons lemon juice
- 3 cloves garlic (minced)
- 1 teaspoon dried oregano
- ½ teaspoon black pepper
- ½ teaspoon paprika (optional, for extra flavor)
- 2 tablespoons fresh parsley, finely chopped
Instructions
- In a bowl, whisk together olive oil, soy sauce, lemon juice, minced garlic, oregano, black pepper, and paprika.
- Add steak cubes to a zip-top bag or bowl and pour marinade over them; mix well and refrigerate for at least 30 minutes (ideally 4–8 hours).
- If using wooden skewers, soak them in water for 30 minutes. Prepare vegetables by cutting them into uniform pieces.
- Thread steak and vegetables onto skewers alternately.
- Preheat the grill to medium-high heat (400–450°F) and oil the grates.
- Grill kabobs for 8–12 minutes, turning every 2–3 minutes until desired doneness (130–145°F internal temperature).
- Allow kabobs to rest for about 5 minutes before serving.
