  • 2 medium avocados, peeled and diced
  • 5 ounces spring salad mix
  • 5 plum tomatoes, chopped
  • 1/2 cup red onion, chopped
  • 1/4 cup walnuts, toasted and chopped
  • 3 tablespoons olive oil
  • 1 tablespoon finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh cilantro
  • 1 tablespoon sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon yellow mustard
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • Pinch of sugar
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Wash all produce thoroughly and chop the tomatoes and red onion into bite-sized pieces.
  2. In a small bowl, whisk together olive oil, lime juice, sour cream, yellow mustard, salt, black pepper, sugar, parsley, and cilantro until well combined.
  3. In a large mixing bowl, combine the spring salad mix with the diced avocados and chopped tomatoes and red onion.
  4. Sprinkle the toasted walnuts over the salad and drizzle with the lime dressing.
