Ingredients
- 2 medium avocados, peeled and diced
- 5 ounces spring salad mix
- 5 plum tomatoes, chopped
- 1/2 cup red onion, chopped
- 1/4 cup walnuts, toasted and chopped
- 3 tablespoons olive oil
- 1 tablespoon finely chopped fresh parsley
- 1 tablespoon finely chopped fresh cilantro
- 1 tablespoon sour cream
- 1 tablespoon lime juice
- 1 teaspoon yellow mustard
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- Pinch of sugar
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Wash all produce thoroughly and chop the tomatoes and red onion into bite-sized pieces.
- In a small bowl, whisk together olive oil, lime juice, sour cream, yellow mustard, salt, black pepper, sugar, parsley, and cilantro until well combined.
- In a large mixing bowl, combine the spring salad mix with the diced avocados and chopped tomatoes and red onion.
- Sprinkle the toasted walnuts over the salad and drizzle with the lime dressing.
- Gently toss all ingredients until evenly coated; garnish with extra parsley if desired.
