- 1 3/4 cup graham cracker crumbs
- 1/3 cup granulated sugar
- 8 tablespoons unsalted butter
- 24 ounces cream cheese (room temperature)
- 3/4 cup granulated sugar
- 3 large eggs (room temperature)
- 2 tablespoons all-purpose flour
- 1 1/2 tablespoons lime zest (plus more for topping)
- 1 1/2 tablespoons key lime juice
- 1/2 cup stabilized whipped cream (piped on top)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9-inch springform pan.
- Combine graham cracker crumbs, melted butter, and sugar in a bowl; press into the bottom of the pan. Bake for 6 to 8 minutes until golden.
- In a large bowl, blend cream cheese and sugar until smooth. Add eggs one at a time, mixing in flour, lime zest, and juice until fully combined.
- Reduce oven temperature to 325°F (160°C). Pour filling onto hot crust and bake for 35 minutes. Turn off oven; let cheesecake cool inside for 1 hour.
- Chill in the refrigerator for at least 4 hours before serving.
