Ingredients
For the Donuts:
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup coconut milk
1/4 cup unsalted butter, melted
1 large egg
2 tablespoons key lime juice
1 teaspoon lime zest
1/2 teaspoon vanilla extract
For the Coconut Glaze:
1 cup powdered sugar
2–3 tablespoons coconut milk
1 tablespoon key lime juice
1/4 cup shredded coconut
Instructions
- Preheat the oven to 350°F (175°C) and grease a donut pan.
- In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix coconut milk, melted butter, egg, key lime juice, lime zest, and vanilla extract.
- Combine wet and dry ingredients until smooth.
- Spoon or pipe the batter into the donut pan, filling each cavity about 3/4 full.
- Bake for 10–12 minutes or until lightly golden and set.
- Let donuts cool slightly before removing from the pan.
- For the glaze, whisk powdered sugar, coconut milk, and key lime juice until smooth.
- Dip the donuts into the glaze and sprinkle with shredded coconut.
- Allow glaze to set before serving.
