- 1 1/4 cup All-Purpose Flour
- 3/4 cup Cake Flour
- 1 tsp. corn starch
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup cold, unsalted butter, cubed
- 1/2 cup light brown sugar, packed
- 1/4 cup white granulated sugar
- 1 large egg
- 1 egg yolk
- 2 cups milk chocolate chips
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, whisk together all-purpose flour, cake flour, corn starch, baking powder, baking soda, and salt. Set aside.
- In a stand mixer, cream the cold butter with light brown sugar and granulated sugar until light and fluffy.
- Add the egg and egg yolk; mix until well combined.
- Gradually incorporate the dry mixture into the wet ingredients without overmixing. Fold in chocolate chips.
- Portion out six cookies weighing about 5.7 oz each onto a lined cookie sheet.
- Bake for 10-12 minutes or until golden brown on top.
- Allow cookies to cool for at least 15 minutes before transferring them to a cooling rack.
