  • 1 cup (92 grams) rolled oats
  • 1/4 cup (31 grams) all-purpose flour or whole wheat pastry flour
  • 4 large eggs
  • 1/2 cup (160 grams) honey
  • 1 tablespoon lemon zest
  • 1/2 cup (120 ml) freshly squeezed lemon juice
  • 1/4 cup (31 grams) all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. For the crust, mix butter, sugar, oats, and flour together until crumbly. Press into a greased 9×9 inch baking dish and bake for 15 minutes until lightly golden.
  3. For the filling, whisk eggs, honey, lemon zest, lemon juice, and remaining flour in a bowl until smooth.
  4. Pour the filling over the pre-baked crust and return to the oven for an additional 20-25 minutes until set.
  5. Allow to cool completely before cutting into squares.
