- 1/2 cup (113 grams) unsalted butter

- 1/4 cup (31 grams) all-purpose flour or whole wheat pastry flour
- 4 large eggs
- 1/2 cup (160 grams) honey
- 1 tablespoon lemon zest
- 1/2 cup (120 ml) freshly squeezed lemon juice
- 1/4 cup (31 grams) all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C).
- For the crust, mix butter, sugar, oats, and flour together until crumbly. Press into a greased 9×9 inch baking dish and bake for 15 minutes until lightly golden.
- For the filling, whisk eggs, honey, lemon zest, lemon juice, and remaining flour in a bowl until smooth.
- Pour the filling over the pre-baked crust and return to the oven for an additional 20-25 minutes until set.
- Allow to cool completely before cutting into squares.
