- 1 pound large shrimp (16–20 count)
- Juice and zest of 1 large lemon
- 2 tablespoons olive oil
- 6 cloves garlic, minced
- 1/4 cup white apple vinegar
- 2 teaspoons dried parsley
- Salt and pepper to taste
Instructions
- Soak wooden skewers in water for at least 30 minutes.
- In a bowl, combine lemon juice, zest, olive oil, garlic, vinegar, parsley, salt, and pepper. Whisk until blended.
- Rinse shrimp under cold water; remove shells if desired.
- Thread shrimp onto soaked skewers (4-5 per skewer).
- Place skewers in a baking dish and pour marinade over them. Cover and refrigerate for 20–30 minutes.
- Preheat grill to low heat.
- Grill skewers for about 3–4 minutes per side until shrimp are pink and opaque.
- Serve garnished with fresh parsley.
