Ingredients

  • Juice and zest of 1 large lemon

  • 2 teaspoons dried parsley
  • Salt and pepper to taste

Instructions

  1. Soak wooden skewers in water for at least 30 minutes.
  2. In a bowl, combine lemon juice, zest, olive oil, garlic, vinegar, parsley, salt, and pepper. Whisk until blended.
  3. Rinse shrimp under cold water; remove shells if desired.
  4. Thread shrimp onto soaked skewers (4-5 per skewer).
  5. Place skewers in a baking dish and pour marinade over them. Cover and refrigerate for 20–30 minutes.
  6. Preheat grill to low heat.
  7. Grill skewers for about 3–4 minutes per side until shrimp are pink and opaque.
