Ingredients
- 8 medium to large organic lemons
- 4 cups (1 liter) non-alcoholic substitute (such as fruit juice or vinegar)
- 4 ¾ cups (1.1 liters) water
- 2.43 lbs (1.1 kg) white sugar
Instructions
- Thoroughly wash the lemons and peel off the yellow skin using a vegetable peeler, avoiding the white pith.
- Place the lemon peels in a large glass jar and pour your chosen non-alcoholic liquid over them. Seal tightly and let it infuse in a dark place for 25 days.
- After infusion, strain the mixture through a fine mesh strainer into a bowl, removing the lemon peels.
- In a large pot over medium heat, combine water and sugar; stir until dissolved completely.
- Once warm, mix in the strained lemon infusion and stir well.
- Let cool before bottling into clean glass containers; refrigerate until ready to serve.
