- 6 large russet potatoes
- 1/4 cup unsalted butter
- 4 oz cream cheese
- 2/3 cup sour cream
- 1/2 cup milk
- 2 cups shredded cheddar cheese
- 1 1/2 cups cooked turkey bacon (crumbled)
- Green onions (diced for topping)
Instructions
- Preheat your oven to 375°F and prepare a 9×13 casserole dish with nonstick cooking spray.
- Wash, peel, and dice the russet potatoes. Boil them in a large pot until tender.
- Drain the potatoes and return them to the pot. Mix in butter, cream cheese, sour cream, and milk until smooth.
- Stir in garlic powder, salt, pepper, 1 1/2 cups cheddar cheese, and crumbled turkey bacon.
- Pour the mixture into the casserole dish and top with the remaining cheddar cheese and turkey bacon.
- Bake for 25-30 minutes until golden brown on top. Garnish with diced green onions before serving.
