- 1 package (8.5 oz) cornbread mix
- 1 cup sour cream
- 1 can (15 oz) cream-style corn
- 1 can (4 oz) green chilies, drained
- 1 cup shredded cheddar cheese
- 1/2 cup chopped cooked turkey bacon
- 1/2 cup diced green onions
- 2 eggs
- 1/4 cup melted butter
- Salt and pepper, to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the cornbread mix, sour cream, cream-style corn, and green chilies. Mix until smooth.
- Fold in the shredded cheddar cheese, chopped turkey bacon, and diced green onions.
- In another bowl, whisk together the eggs and melted butter; add to the cornbread mixture along with salt and pepper.
- Pour the mixture into a greased baking dish and spread evenly.
- Bake for 30–35 minutes or until golden brown on top and a toothpick comes out clean.
