- ¾ cup mushrooms (sliced)
- 2 roma tomatoes (chopped)
- 4 slices cooked turkey bacon (chopped)
- ½ cup shredded cheddar cheese
Instructions
- In a large bowl, whisk together the eggs, milk, and salt until fully combined.
- Heat butter in a large skillet over medium heat. Add diced onion, bell peppers, mushrooms, and a pinch of salt; sauté for about 3–5 minutes until softened.
- Stir in the chopped tomatoes and turkey bacon until well mixed.
- Pour the egg mixture into the skillet and gently scramble until cooked to your desired consistency.
- Remove from heat and top with shredded cheddar cheese. Garnish with chopped chives if desired before serving.
