- 1/2 cup softened butter
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar

- 1 teaspoon vanilla extract
- 1/4 cup vegetable oil
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup Lucky Charms vegan marshmallows
- 1/2 cup white chocolate chips (optional)
- Rainbow or gold sprinkles (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until smooth.
- Add the egg and vanilla extract; mix until fluffy.
- Stir in the vegetable oil until well combined.
- Gradually add flour, baking soda, and baking powder; mix just until incorporated.
- Gently fold in Lucky Charms vegan marshmallows and optional chocolate chips and sprinkles.
- Scoop dough into balls (about 2 tablespoons each) and place them on prepared sheets, spaced apart.
- Bake for 9–11 minutes until edges are set but centers remain soft.
- Allow cooling on the sheet for a few minutes before transferring to a wire rack.
