- 10–11 graham crackers
- 5 tablespoons unsalted butter, melted
- 3 tablespoons granulated sugar
- 2½ cups fresh mango (or thawed frozen/canned)
- 1 (14-ounce) can sweetened condensed milk
- 3 large eggs
- 2 egg yolks
- 1 teaspoon fresh lemon zest
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the crust: Pulse graham crackers in a food processor until fine. Mix with melted butter and sugar, then press into a 9-inch pie pan. Refrigerate.
- Make the custard: Blend fresh mango, sweetened condensed milk, eggs, egg yolks, lemon zest, and vanilla until smooth.
- Assemble and bake: Pour custard into chilled crust and bake for 35–40 minutes until slightly jiggly in the center.
- Chill: Let cool at room temperature, then refrigerate for at least 4 hours before serving.
