Ingredients
- 1 3/4 cups (245g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (1 stick/115g) unsalted butter, softened to room temperature
- 1/2 cup (100g) brown sugar (or granulated sugar)
- 1/3 cup (80 ml) maple syrup
- 2 large eggs
- 1 1/4 cups mashed bananas (3–4 bananas)
- 1 teaspoon vanilla extract
- 1/4 cup (60 ml) plain yogurt or sour cream
- 3/4 cup (80g) walnuts or pecans, roughly chopped
- 1/3 cup maple syrup (for topping)
Instructions
- Preheat your oven to 350°F (180°C) and grease a 9×5-inch loaf pan.
- In a medium bowl, sift together flour, baking soda, and salt; set aside.
- In your mixer fitted with the paddle attachment, beat softened butter and brown sugar until fluffy for about 3-4 minutes. Add in 1/3 cup of maple syrup and beat for another minute.
- Add eggs one at a time, ensuring thorough mixing after each addition. Mix in mashed bananas and vanilla extract until well combined.
- Lower the mixer speed to add dry ingredients: add half of the dry mixture, mixing just until combined. Incorporate yogurt or sour cream before adding in the remaining dry mix. Mix until just combined; do not overmix! Fold in chopped nuts while reserving some for garnish.
- Pour batter into your prepared loaf pan, top with reserved nuts, and bake for 50-60 minutes; check doneness by inserting a toothpick into the center; it should come out clean. If browning too quickly, cover loosely with aluminum foil after about 30 minutes.
- Once baked, remove from oven and place on a wire rack to cool slightly. Warm additional maple syrup in a small saucepan over low heat or microwave briefly. Drizzle warm syrup over banana bread while still warm; poke holes if needed for better absorption.
