Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup softened butter
- 1/4 cup sugar
- 1 cup dark brown sugar
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 2 large apples (finely chopped)
- 2 Tbsp brown sugar
- 1 Tbsp butter
- 1/4 cup pure maple syrup
- 1/2 cup powdered sugar
- 1/4 tsp vanilla extract
- 1/8 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Line an 11×7 baking pan with foil or spray with cooking spray.
- In a small bowl, mix finely chopped apples with brown sugar, butter, vanilla extract, and cinnamon. Set aside.
- In a large bowl, cream together softened butter, sugar, and dark brown sugar until fluffy. Add eggs one at a time, mixing well after each.
- Stir in vanilla extract and cinnamon. In another bowl, whisk flour, baking powder, and salt; gradually add to the wet mixture until just combined. Gently fold in the apple mixture.
- Pour the batter into the prepared pan and spread evenly. Bake for about 25 minutes or until golden brown around the edges.
- For the glaze, combine maple syrup, powdered sugar, vanilla extract, and ground cinnamon in a small bowl until smooth.
- Let blondies cool before drizzling with glaze.
