  • 1 teaspoon baking soda

  • 1/4 cup unsalted butter for glaze
  • 1/2 cup pure maple syrup
  • 1/4 teaspoon ground cinnamon for glaze
  • 1/2 teaspoon vanilla extract for glaze
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a loaf pan by greasing it and lining the bottom with parchment paper.
  2. In a small bowl, mash the bananas with brown sugar, vanilla extract, and ground cinnamon until smooth. Set aside.
  3. In a large mixing bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  4. Sift in flour, baking soda, and salt; mix until just combined.
  5. Fold in the banana mixture until fully incorporated.
  6. Pour the batter into the prepared loaf pan and bake for 35-40 minutes (for smaller pans) or about 30 minutes then lower to 325°F for larger pans, until a toothpick comes out clean.
