- 3–4 medium bananas
- 2 tablespoons brown sugar
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 2 eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup unsalted butter for glaze
- 1/2 cup pure maple syrup
- 1/4 teaspoon ground cinnamon for glaze
- 1/2 teaspoon vanilla extract for glaze
- 1 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Prepare a loaf pan by greasing it and lining the bottom with parchment paper.
- In a small bowl, mash the bananas with brown sugar, vanilla extract, and ground cinnamon until smooth. Set aside.
- In a large mixing bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition.
- Sift in flour, baking soda, and salt; mix until just combined.
- Fold in the banana mixture until fully incorporated.
- Pour the batter into the prepared loaf pan and bake for 35-40 minutes (for smaller pans) or about 30 minutes then lower to 325°F for larger pans, until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack.
