  • 2 pounds lean ground beef (or half beef and half chicken/turkey)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • ½ cup milk
  • 2 large eggs
  • ¾ cup breadcrumbs
  • ¾ cup ketchup (for the glaze)
  • ¼ cup brown sugar
  • 2 tablespoons apple cider vinegar

Instructions

  1. Preheat your oven to 350°F.
  2. In a skillet over medium heat, melt butter and sauté chopped onions for 3-4 minutes until softened. Add garlic and cook for an additional 30 seconds.
  3. In a large mixing bowl, combine the sautéed onions and garlic with ground beef, milk, eggs, breadcrumbs, ketchup, Italian seasoning, salt, black pepper, and parsley. Mix well.
  4. Transfer the mixture into a loaf pan and press down gently to smooth the top.
  5. Bake for about 40 minutes.
  6. While baking, mix the glaze ingredients (ketchup, brown sugar, apple cider vinegar). After 40 minutes of baking, spread the glaze over the meatloaf and return it to the oven for another 20-30 minutes until cooked through.
  7. Let it rest for about 10 minutes before slicing.
