Ingredients
- 1 lb skinless and boneless chicken breasts (cut into cubes)
- 1 tablespoon Hidden Valley® Simply Ranch: Cucumber Basil Ranch
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 tablespoon finely chopped fresh oregano
- 1/4 teaspoon salt
- 3 dashes cayenne pepper
- 1 tablespoon olive oil (for grilling)
- 1 cup cherry tomatoes (optional)
- Lemon wedges (optional)
- 2 tablespoons fresh parsley, finely chopped
Instructions
- In a mixing bowl, combine Hidden Valley® Simply Ranch, finely chopped oregano, lemon juice, salt, cayenne pepper, and olive oil.
- Add cubed chicken to the marinade and stir until well-coated. Cover and refrigerate for 1 hour.
- Preheat your grill over medium-high heat and brush with olive oil.
- Grill chicken bites for about 5-7 minutes on each side until cooked through with char marks.
- Serve hot with extra ranch dressing for dipping.
