  • 6 cups chopped romaine lettuce
  • 1 cup chopped grape tomatoes
  • 1 large cucumber (diced)
  • 1/4 cup diced red onion
  • 1 cup cooked quinoa
  • 2 cooked chicken breasts (diced)
  • 1/2 cup pepperoncini
  • 1/3 cup feta cheese (optional)
  • 1/3 cup olive oil
  • 3 tablespoons apple vinegar
  • 1 1/2 teaspoons dijon mustard
  • Juice from 1 lemon
  • 2 teaspoons minced garlic
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large mixing bowl, combine the chopped romaine lettuce.
  2. Dice the cucumber and chop the tomatoes and red onion. Add these along with the cooked quinoa and diced chicken to the bowl.
  3. For the dressing, whisk together olive oil, apple vinegar, dijon mustard, lemon juice, minced garlic, oregano, salt, and black pepper in a salad dressing shaker.
  4. Pour the dressing over the salad mixture and toss gently until well-coated.
