Ingredients
- 8 boneless skinless chicken thighs
- 5 tbsp extra virgin olive oil
- 1 garlic clove (minced)
- Juice of 2 lemons
- 1 red onion (halved and thinly sliced)
- Spices: paprika, allspice, ground nutmeg, green cardamom, salt, and pepper
- Fresh dill (for yogurt sauce)
Instructions
- Prepare the Dill Greek Yogurt Sauce by blending minced garlic, chopped dill, Greek yogurt, olive oil, lemon juice, and optional cayenne pepper in a food processor until smooth. Refrigerate.
- In a bowl, mix minced garlic with spices and olive oil. Rub this mixture evenly onto the chicken thighs.
- In a large dish, combine sliced onions and lemon juice. Place seasoned chicken on top and gently toss to coat.
- Marinate in the refrigerator for 2–4 hours for enhanced flavor.
- Preheat grill to medium-high heat; grill chicken thighs for about 5 minutes per side until cooked through (internal temp should reach 165°F).
- Let the grilled chicken rest for 5 minutes before serving with the yogurt sauce.
