Ingredients
1 lb ground beef
2 tablespoons olive oil
3 cloves garlic, minced
1 small onion, diced
1 bell pepper, sliced
1 zucchini, chopped
1 cup cherry tomatoes, halved
1 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon dried oregano
Salt and pepper, to taste
2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pan over medium-high heat.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Stir in garlic and onion, cooking until softened.
- Add bell pepper and zucchini, sautéing until tender.
- Mix in cherry tomatoes, paprika, cumin, and oregano.
- Season with salt and pepper and cook for a few more minutes.
- Remove from heat and garnish with fresh parsley.
- Serve warm with rice, couscous, or pita bread.
