1 small onion, diced
1 bell pepper, sliced
1 zucchini, chopped
1 cup cherry tomatoes, halved
1 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon dried oregano
Salt and pepper, to taste
2 tablespoons fresh parsley, chopped

Instructions

  • Heat olive oil in a large pan over medium-high heat.
  • Add ground beef and cook until browned, breaking it apart as it cooks.
  • Stir in garlic and onion, cooking until softened.
  • Add bell pepper and zucchini, sautéing until tender.
