- 8 ounces rotini pasta
- 2 cups corn kernels (fresh, frozen, or canned)
- 1/2 cup crumbled cotija cheese
- 1/4 cup finely diced red onion
- 1/4 cup chopped fresh cilantro
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- 1. Cook the rotini pasta in salted boiling water until al dente. Drain and cool.
- 2. In a skillet over medium-high heat, char the corn for about 5-7 minutes until slightly brown. Let cool.
- 3. In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, smoked paprika, salt, and pepper.
- 4. Add cooled pasta and corn to the dressing along with cotija cheese, red onion, and cilantro. Toss gently to combine.
- 5. Serve immediately or chill for enhanced flavor.
