  • 1 tablespoon olive oil
  • 1 red bell pepper (diced)
  • 1 bunch fresh cilantro (minced, a few leaves left for garnish)
  • 1 jalapeno (diced)
  • 1/2 large red onion (diced)
  • 2/3 cup cotija cheese (shredded)
  • 3 tablespoons sour cream
  • 2 tablespoons mayonnaise
  • 4 tablespoons fresh lime juice (approximately 2 limes)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon chili powder
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Heat olive oil in a sauté pan over medium-high heat. Add corn and cook for about 7-10 minutes until slightly charred. Transfer to a large mixing bowl.
  2. In the same bowl, combine charred corn with diced red bell pepper, jalapeno, minced cilantro, and red onion. Mix thoroughly.
  3. In a small bowl, whisk together sour cream, mayonnaise, lime juice, cumin, paprika, kosher salt, and chili powder until smooth.
  4. Pour dressing over the corn mixture and gently toss until everything is well-coated. Stir in half of the cotija cheese.
  5. Top with remaining cotija cheese and garnish with reserved cilantro leaves before serving.
